    Prepare Gelatin

    In a small bowl, sprinkle the gelatin powder over the water. Let it sit for about 5 minutes to bloom.

    Heat Cream and Milk

    In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the mixture is hot but not boiling.

    Add Gelatin

    Once the cream mixture is hot, remove it from the heat. Stir in the bloomed gelatin and vanilla extract until fully dissolved.

    Pour into Molds

    Pour the mixture into individual serving cups or molds. Allow to cool slightly before covering with plastic wrap.

    Chill

    Refrigerate for at least 4 hours or until set.

Berry Sauce

    Prepare Berries

    In a saucepan, combine the mixed berries, granulated sugar, and lemon juice.

    Cook Sauce

    Cook over medium heat until the berries start to break down and the sugar dissolves, about 5-7 minutes.

    Cool Sauce

    Remove from heat and let the berry sauce cool to room temperature.

    Serve

    Once the panna cotta is set, remove it from the fridge, run a knife around the edges, and invert onto a plate. Top with the berry sauce before serving.
