Preparation of Gelato Base

Heat the Milk and Cream
In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it is warm but not boiling, stirring occasionally.

Whisk Egg Yolks and Sugar
In a bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture becomes pale and creamy.

Cool and Add Flavor
Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.

Once the base is chilled, divide it into separate bowls if making different flavors. Add your chosen flavoring ingredient (fruit puree, melted chocolate, or chopped nuts) to each bowl and mix well.

Pour the flavored mixtures into an ice cream maker and churn according to the manufacturer's instructions, usually around 20-30 minutes, until it reaches a soft-serve consistency.

Transfer the gelato to an airtight container and freeze for an additional 2-4 hours to firm up before serving.
