Calamari

Method

Calamari Preparation

  1. 1

    Prepare the Calamari

In a medium bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

  2. 2

    Coat the Calamari

Dredge the cleaned and sliced calamari in the flour mixture, ensuring each piece is evenly coated. Shake off any excess flour.

  3. 3

    Heat the Oil

In a large, deep pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of the coated calamari in; it should sizzle immediately.

  4. 4

    Fry the Calamari

Fry the calamari in batches, being careful not to overcrowd the pot. Cook for about 2-3 minutes or until golden brown. Use a slotted spoon to remove the calamari and place them on a plate lined with paper towels to drain excess oil.

Marinara Sauce Preparation

  1. 5

    Sauté Garlic

In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

  2. 6

    Simmer the Sauce

Add the crushed tomatoes, oregano, salt, black pepper, sugar, and chopped basil to the saucepan. Stir well and bring to a simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

Serving

  1. 7

    Plate and Serve

Once the calamari is fried and the marinara sauce is ready, serve the calamari hot with the marinara sauce on the side for dipping.
