Prepare the Tomatoes
Dice the fresh tomatoes and place them in a mixing bowl.

Add Flavorings
Mince the garlic and add it to the bowl with the diced tomatoes. Add the balsamic vinegar, salt, and black pepper to taste. Mix well.

Chop the Basil
Roughly chop the fresh basil leaves and add them to the tomato mixture. Drizzle 2 tablespoons of extra virgin olive oil over the mixture and stir gently.

Slice the Baguette
Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices.

Toast the Bread
Arrange the baguette slices on a baking sheet. Brush the tops with the remaining 1 tablespoon of extra virgin olive oil. Toast in the preheated oven for about 5-7 minutes, or until golden brown.

Top the Toasts
Remove the toasted bread from the oven. Let it cool slightly, then spoon the tomato and basil mixture generously onto each slice.

Add Mozzarella
Tear the mozzarella cheese into small pieces and scatter them on top of the bruschetta.

Serve immediately while warm, and enjoy your delicious bruschetta!
