Cook the Pasta
Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta cooking water, then drain the spaghetti.

Prepare the Sauce
While the pasta cooks, chop the pancetta or guanciale into small pieces. In a pan over medium heat, cook the pancetta until crispy, about 5-7 minutes.

Mix the Eggs and Cheese
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Add Egg Mixture
Quickly pour the egg and cheese mixture over the hot pasta, tossing constantly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach desired consistency.

Season and Serve
Taste the carbonara and season with salt and more black pepper if needed. Serve immediately with extra Parmesan cheese on top.
