Marinade

Method

Marinade Preparation

  1. 1

    Mix the Marinade

In a medium bowl, whisk together the soy sauce, honey, apple cider vinegar, minced garlic, grated ginger, and black pepper until fully combined.

  2. 2

    Marinate the Chicken

Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.

Cooking the Chicken

  1. 3

    Preheat the Oven

Preheat your oven to 375°F (190°C) while the chicken is marinating.

  2. 4

    Sear the Chicken

In a large skillet over medium-high heat, add the olive oil. Remove the chicken from the marinade (reserve the marinade) and season it with salt. Place the chicken skin side down in the skillet and sear for 5-7 minutes until golden brown.

  3. 5

    Transfer to Oven

Flip the chicken pieces over and transfer them to a baking dish. Pour the reserved marinade over the chicken.

Adding Vegetables

  1. 6

    Prepare the Vegetables

In the same skillet used for the chicken, add the quartered plum tomatoes, sliced bell peppers, sliced red onion, and sliced zucchini. Sauté for 3-4 minutes until slightly softened.

  2. 7

    Combine and Bake

Spread the sautéed vegetables around the chicken in the baking dish. Bake in the preheated oven for 30-35 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the vegetables are tender.

Serving

  1. 8

    Plate and Serve

Once cooked, remove the baking dish from the oven. Let the chicken rest for 5 minutes before serving. Serve the chicken thighs alongside the roasted vegetables and drizzle with any remaining sauce from the baking dish.
