Calamari Preparation

Clean and Cut the Calamari
Begin by cleaning the fresh calamari. Remove the head, tentacles, and innards, then rinse under cold water. Cut the body into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper until well combined.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari
Toss the calamari rings in the flour mixture until evenly coated. Shake off any excess flour.

Fry the Calamari
Carefully add the coated calamari to the hot oil in small batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Pour in the canned crushed tomatoes, then add the dried oregano, dried basil, salt, black pepper, and sugar. Stir to combine.

Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.
