Crepe Preparation

    Make the Crepe Batter

    In a mixing bowl, whisk together the all-purpose flour, milk, eggs, granulated sugar, vanilla extract, and a pinch of salt until the mixture is smooth and free of lumps.

    Cook the Crepes

    Heat a non-stick skillet over medium heat and add a small amount of butter to coat the surface. Pour about 1/4 cup of crepe batter into the skillet, swirling it to cover the bottom evenly. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes. Repeat with the remaining batter.

    Scramble the Eggs

    In a separate bowl, whisk together the eggs, adding salt and black pepper to taste. In a non-stick pan, cook the eggs over medium heat, stirring gently until they are just set but still soft.

    Add Cheese and Meat

    Once the eggs are almost done, stir in the cheddar jack cheese and your choice of cooked bacon, sausage, or ham. Allow the cheese to melt and the mixture to heat through.

Assembly

    Fill the Crepes

    Place a crepe on a plate and spoon the egg and cheese mixture onto the center. Fold the crepe over the filling, then fold the sides to enclose it.
