Preparation

1. Cook the Bacon

In a large skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove them from the pan and place on paper towels to drain excess fat. Once cooled, crumble the bacon into small pieces.

2. Boil Water

In a medium saucepan, bring 4 cups of water to a boil. Add 1 tsp of salt to the water.

3. Prepare the Grits

Once the water is boiling, slowly whisk in 1 cup of grits. Reduce heat to low and let it simmer, stirring occasionally, for about 20-25 minutes until the grits are thick and creamy.

4. Add Cheese and Butter

Once the grits are cooked, remove from heat and stir in 2 tbs of butter and 1 cup of shredded cheddar cheese until melted and well combined.

5. Season the Grits

Add black pepper to taste, and mix in the crumbled bacon, reserving a small amount for garnish.
