Caramelize the Onions
In another skillet, melt butter over medium heat. Add sliced onions, brown sugar, and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until onions are soft and caramelized.
Scrambled Eggs

Prepare the Scrambled Eggs
In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. In a non-stick skillet, melt a little butter over medium heat. Pour the egg mixture into the skillet and gently stir with a spatula until the eggs are soft and slightly runny. Remove from heat and fold in the cheddar jack cheese until melted.

Assemble the Dish
On a plate, layer the seared sirloin tips, followed by the caramelized onions, and top with the scrambled eggs. Drizzle the mornay sauce over the top and finish with freshly cracked black pepper.
