Method

Preparation

  1. 1

    Prepare the Ingredients

Ensure the shrimp is peeled and deveined. Halve the cherry tomatoes and mince the garlic. Rinse the spinach and chop the parsley.

Cooking

  1. 2

    Sauté the Shrimp

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

  2. 3

    Cook the Tomatoes

Add the halved cherry tomatoes to the skillet and cook for 2-3 minutes until they begin to soften.

  3. 4

    Add Spinach and Pesto

Stir in the fresh spinach and cook until wilted, about 2 minutes. Then, add the basil pesto and mix well.

  4. 5

    Incorporate the Shrimp

Add the shrimp to the skillet, seasoning with salt and black pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes.

  5. 6

    Add Cream

Pour in the heavy cream and stir to combine. Let it simmer for another 2 minutes to thicken the sauce slightly.

Plating

  1. 7

    Serve the Dish

Plate the shrimp scampi, then top with crumbled goat cheese, fried capers, and chopped parsley. Serve immediately.
