Preparation

  1. 1

    Prepare the Brussels Sprouts

Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut them in half lengthwise.

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 8-10 minutes. Remove the bacon and place it on a paper towel to drain excess grease. Once cooled, crumble the bacon into bits.

Cooking

  1. 3

    Roast the Brussels Sprouts

Preheat the oven to 400°F (200°C). In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated. Spread them out on a baking sheet in a single layer.

  2. 4

    Bake

Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the Brussels sprouts are tender and nicely browned, stirring halfway through to ensure even cooking.

Assembly

  1. 5

    Combine Ingredients

Once the Brussels sprouts are roasted, remove them from the oven and transfer to a serving dish. Top with crumbled bacon, pickled onions, and crumbled goat cheese.

  2. 6

    Finish with Balsamic Glaze

Drizzle balsamic glaze over the top to taste and serve warm.
