Prepare the Ingredients
Slice the onion into thin rings. Crumble the bleu cheese into small pieces and set aside. Chop the fresh parsley for garnish.

Sauté the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook until the onions are caramelized, about 10-15 minutes, stirring occasionally.

Cook the Sirloin Tips
In another skillet, heat the remaining tablespoon of olive oil over high heat. Season the sirloin tips with blackening seasoning, salt, and black pepper. Sear the tips for about 3-4 minutes on each side until browned and cooked to desired doneness.

Make the Cream Sauce
Reduce the heat to medium-low and add the heavy cream to the skillet with the sirloin tips. Stir in the caramelized onions and crumbled bleu cheese. Allow the mixture to simmer for about 5-7 minutes until the sauce thickens slightly.

Spoon the blackened sirloin tips and cream sauce onto plates. Top with a dollop of creme fraiche, additional crumbled bleu cheese, and a sprinkle of chopped parsley for garnish.
