    In a bowl, combine minced garlic, chopped rosemary, olive oil, salt, black pepper, and lemon juice to create a marinade.

    Marinate the Lamb

    Rub the marinade all over the leg of lamb, ensuring it’s well coated. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 180°C (350°F).

    Prepare the Vegetables

    Chop the vegetables and place them in a roasting pan. Drizzle with olive oil, and season with salt and pepper.

    Roast the Lamb

    Place the marinated lamb on top of the vegetables in the roasting pan. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.

    Once done, remove the lamb from the oven and let it rest for 15 minutes before slicing. Serve with the roasted vegetables.
