    Prepare the Chicken

    Season the chicken pieces with salt, black pepper, and 1 tablespoon of sumac. In a large pot, heat half of the olive oil over medium heat and brown the chicken on all sides. Remove and set aside.

    Cook the Onions

    In the same pot, add the remaining olive oil and the sliced onions. Cook until the onions are caramelized and golden brown, about 15 minutes.

    Combine Ingredients

    Add the browned chicken back to the pot with the onions. Sprinkle the remaining sumac over the chicken and mix well to combine. Add 1 cup of water, cover, and simmer for about 20-25 minutes until the chicken is cooked through.

    Toast the Pine Nuts

    In a small pan, toast the pine nuts over low heat until golden, being careful not to burn them. Remove from heat and set aside.

    Prepare the Flatbread

    While the chicken is simmering, preheat the oven to 350°F (175°C). Place the flatbreads on a baking sheet and warm them in the oven for about 5-7 minutes.

    To serve, place the warm flatbreads on a large platter. Top with the chicken and onion mixture, and garnish with toasted pine nuts and chopped parsley. Enjoy!
