Preparation

    Prepare the Potatoes

    Peel and cut the Russet potatoes into fry shapes. Soak them in cold water for at least 30 minutes, then drain and pat dry.

    Cook the Potatoes

    Preheat oil in a deep fryer or large pot. Fry the potatoes in batches until golden and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Season with salt.

Cooking Meats

    Cook the Bacon and Sausages

    In a skillet over medium heat, cook the bacon until crispy, about 5 minutes. Remove and set aside. In the same skillet, cook the country sausages until browned and cooked through, about 10 minutes. Slice into rounds.

    Prepare the Maple Pulled Ham

    Heat the maple pulled ham in a small saucepan over low heat until warmed through.

Assembly

    Assemble the Poutine

    On a serving plate, layer the crispy fries, followed by the cooked bacon, sausage rounds, and maple pulled ham. Top with cheese curds.

    Add Hollandaise and Egg

    Drizzle the hollandaise sauce over the top and place a poached or fried egg on each serving.
