Preparing the Chicken
Fry the Chicken
In a bowl, combine flour, cornstarch, baking powder, salt, and pepper. In another bowl, whisk eggs and milk together. Dip chicken breasts in the egg mixture, then coat with the flour mixture. Heat oil in a pan and fry chicken until golden brown and cooked through, about 6-8 minutes per side.
Making the Waffles
Prepare the Waffle Batter
In a large bowl, mix flour, baking powder, sugar, and salt. In another bowl, whisk eggs, milk, melted butter, and vanilla extract. Combine wet and dry ingredients and stir until just mixed. Preheat waffle maker and cook waffles according to manufacturer's instructions.
Making the Hollandaise Sauce
Prepare the Hollandaise
In a heatproof bowl, whisk egg yolks and lemon juice until thickened. Gradually whisk in melted butter until smooth. Season with salt and cayenne pepper.
Preparing the Sides
Cook the Potatoes
Dice potatoes and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast in a preheated oven at 425°F (220°C) for about 25-30 minutes or until golden and crispy.

Assemble the Dish
On a plate, place a waffle, top with fried chicken, drizzle with hollandaise sauce, and serve with roasted potatoes and fresh fruits on the side.
