Prepare the Salad

In a large bowl, combine mixed greens, cherry tomatoes (halved), and sliced cucumber. Drizzle with balsamic vinaigrette and toss gently to combine. Serve immediately.

Cook the Chicken

Preheat the oven to 375°F (190°C). In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Season chicken breasts with salt, black pepper, and rosemary. Add chicken to the skillet and sear until golden brown on both sides. Transfer to the oven and bake for 20-25 minutes or until fully cooked.

Prepare the Asparagus

While the chicken is baking, wash and trim the asparagus. Toss with olive oil, salt, and pepper, then roast in the oven for the last 10-15 minutes of the chicken's cooking time.

Prepare the mashed potatoes according to your preferred method. Serve alongside the chicken and asparagus.
