Preparation of Eggplant

Slice and Salt the Eggplant
Slice the eggplant into 1/2 inch thick rounds and sprinkle with 1 tsp of salt. Let it sit for 30 minutes to draw out moisture.

Rinse and Dry
Rinse the eggplant slices under cold water and pat them dry with paper towels.

Cooking the Veal

Prepare the Veal
Season the veal cutlets with salt and black pepper.

Bread the Veal
Coat each veal cutlet in flour, dip in beaten eggs, then coat with breadcrumbs.

Cook the Veal
In a large skillet, heat 3 tablespoons of olive oil over medium-high heat. Cook the breaded veal cutlets for about 4-5 minutes on each side until golden brown. Remove and set aside.
Making the Mushroom Marsala Sauce

Sauté Shallots
In the same skillet used for the veal, add the chopped shallots and sauté until translucent.

Add Mushrooms
Add sliced mushrooms and cook until they are soft and browned.

Deglaze with Marsala
Pour in the Marsala wine, scraping up any brown bits from the pan. Let it simmer for about 5 minutes.

Layer the Dish
In a baking dish, place one veal cutlet, top with a slice of fried eggplant, and sprinkle with mozzarella cheese. Repeat the layers.

Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until the cheese is melted and bubbly.

Serve the layered veal alla Sorrentino topped with the mushroom Marsala sauce.
