    Prepare the Veal

    Pound the veal cutlets to an even thickness of about 1/2 inch using a meat mallet. Season both sides with salt and black pepper.

    Set Up Breading Station

    In one shallow dish, place the all-purpose flour. In a second dish, beat the eggs. In a third dish, combine the Parmesan cheese with a pinch of salt and black pepper.

    Bread the Veal

    Dredge each veal cutlet in flour, shaking off the excess. Dip into the beaten eggs, allowing the excess to drip off. Finally, coat with the Parmesan cheese mixture, pressing lightly to adhere.

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until hot but not smoking.

    Cook the Cutlets

    Add the breaded veal cutlets to the skillet in a single layer. Cook for about 3-4 minutes per side, or until golden brown and cooked through. Remove the cutlets and keep warm on a plate.

    Prepare the Sauce

    In the same skillet, add the remaining 2 tablespoons of butter and lemon juice. Scrape any brown bits from the bottom of the pan and let simmer for 1-2 minutes.

    Pour the sauce over the veal cutlets and garnish with fresh parsley and lemon slices. Serve immediately.
