Preparation

    Prep the Shrimp

    Peel and devein the jumbo shrimp, removing the shells and tails. Pat them dry with paper towels.

    Prepare the Flour

    In a shallow dish, add the flour and season it with salt and black pepper. Mix well.

    Slice the Mushrooms

    Clean and slice the mushrooms into thin pieces. Mince the garlic cloves.

Cooking

    Flour the Shrimp

    Dredge each shrimp in the seasoned flour, ensuring they are well coated. Shake off any excess flour.

    Cook the Shrimp

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the shrimp and cook for about 2-3 minutes on each side until golden brown. Remove the shrimp from the skillet and set aside.

    Sauté Garlic and Mushrooms

    In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sliced mushrooms. Sauté for about 5 minutes until the mushrooms are tender and the garlic is fragrant.

    Make the Sauce

    Pour in the red wine, scraping the bottom of the skillet to deglaze. Allow it to reduce for about 2-3 minutes, then add the crushed tomatoes and dried oregano. Stir well.

    Combine and Simmer

    Return the cooked shrimp to the skillet. Stir to combine, then cover and let it simmer for about 10 minutes, allowing the flavors to meld together.

    Finish with Basil

    Add fresh basil to the skillet and stir gently. Adjust seasoning with salt and pepper to taste.
