Preparation

    Prepare the Shrimp

    In a mixing bowl, combine the salt, black pepper, and flour. Dredge the shrimp in the flour mixture, shaking off the excess, and set aside.

    Beat the Eggs

    In another bowl, beat the eggs until well mixed. This will be used for coating the shrimp.

Cooking

    Heat the Pan

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until the butter is melted and slightly bubbling.

    Cook the Shrimp

    Dip each dredged shrimp in the beaten eggs, then place them into the skillet. Cook for about 2-3 minutes on each side or until golden brown and cooked through. Remove the shrimp and set aside.

    Make the Sauce

    In the same skillet, add the remaining butter and the minced garlic. Sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

    Add Wine and Lemon Juice

    Pour in the white wine and lemon juice, scraping up any brown bits from the bottom of the pan. Let the mixture simmer for about 3-4 minutes until it reduces slightly.

    Combine and Serve

    Return the shrimp to the skillet, tossing them in the sauce. Cook for an additional 1-2 minutes to heat through. Garnish with chopped parsley before serving.
