Preparation

    Prepare the scallops

    Rinse the scallops under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

    Mince the garlic

    Peel and mince the garlic cloves finely.

    Prepare the snow peas

    Trim the ends of the snow peas and set them aside.

Cooking

    Sear the scallops

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the scallops and cook for about 2-3 minutes on each side until they are golden brown and opaque. Remove the scallops from the skillet and set them aside.

    Sauté the garlic

    In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

    Cook the snow peas

    Add the snow peas to the skillet and sauté for about 2 minutes until they are bright green and tender-crisp.

    Make the sauce

    Pour the white wine into the skillet and scrape up any brown bits from the bottom. Bring to a simmer and let it reduce for about 2 minutes.

    Finish the sauce

    Reduce the heat to low and add the unsalted butter, stirring until melted and incorporated. Stir in the lemon juice and chopped parsley.

    Combine and serve

    Return the scallops to the skillet to warm them through, then serve immediately with the snow peas and sauce drizzled on top.
