Main Ingredients

Method

Preparation

  1. 1

    Prepare the Ingredients

Chop the bacon into small pieces. Mince the garlic cloves and finely chop the onion. Dice the fresh tomatoes and roughly chop the fresh basil.

Cooking

  1. 2

    Cook the Bacon

In a large skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.

  2. 3

    Sauté the Aromatics

In the same skillet, add the minced garlic and chopped onion. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

  3. 4

    Add Tomatoes and Wine

Stir in the diced fresh tomatoes and cook for another 5 minutes, allowing them to soften. Pour in the white wine, and bring the mixture to a simmer. Add salt and black pepper.

  4. 5

    Combine Ingredients

Return the crispy bacon to the skillet and stir to combine. Let the sauce simmer for an additional 10 minutes, stirring occasionally.

  5. 6

    Finish with Basil

Just before serving, stir in the chopped fresh basil. Cook for another 2 minutes until the basil is wilted and fragrant.
