Preparation of Ingredients

    Soaking Beans

    Rinse the dried cannellini beans under cold water and soak them in a large bowl with enough water to cover them overnight (or at least 8 hours). Drain and set aside.

    Chopping Vegetables

    Dice the onion, carrot, and celery stalks into small pieces. Mince the garlic cloves.

Cooking the Soup

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Spices

    Add the minced garlic, salt, black pepper, dried oregano, and bay leaf to the pot. Cook for an additional 2 minutes until fragrant.

    Combine Ham Hocks and Broth

    Add the ham hocks to the pot, along with the vegetable broth and water. Bring to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let it simmer for about 30 minutes. This allows the flavors to meld and the ham hocks to release flavor.

    Add Beans and Pasta

    After 30 minutes, add the soaked cannellini beans and macaroni pasta to the pot. Stir well and continue to simmer for another 15-20 minutes, or until the pasta is cooked al dente.

    Finish the Soup

    Remove the ham hocks from the soup. Shred any meat from the bones and return the meat to the pot. Discard the bones and bay leaf.

    Serve

    Ladle the Pasta Fagioli into bowls, garnish with freshly chopped parsley and grated Parmesan cheese before serving.
