Osso Bucco

    Prepare the Ingredients

    Chop the onion, carrot, and celery into small dice. Mince the garlic. Pat the veal shanks dry and season with salt and black pepper.

    Sear the Veal

    In a heavy pot or Dutch oven, heat 3 tablespoons of olive oil over medium-high heat. Add the veal shanks and sear until browned on all sides, about 10 minutes. Remove from pot and set aside.

    Cook the Aromatics

    In the same pot, add the chopped onion, carrot, celery, and minced garlic. Sauté until softened, about 5-7 minutes.

    Deglaze the Pot

    Pour in the white wine, scraping up any browned bits from the bottom of the pot. Allow to simmer for 2-3 minutes.

    Add Remaining Ingredients

    Stir in the diced tomatoes, beef broth, fresh thyme, and lemon zest. Return the veal shanks to the pot, ensuring they are submerged in the liquid.

    Braise

    Cover the pot and reduce heat to low. Allow to braise for 1.5 to 2 hours, or until the veal is fork-tender.

Shrimp Picante

    Prepare the Shrimp

    Peel and devein the jumbo shrimp. Pat dry with paper towels and season with salt and black pepper.

    Make the Breading

    In a bowl, beat the egg. In another bowl, place the breadcrumbs. Dip each shrimp into the egg, then coat with breadcrumbs.

    Heat the Oil

    In a large skillet, heat 4 tablespoons of olive oil over medium heat.

    Cook the Shrimp

    Add the breaded shrimp to the skillet in batches, cooking for about 3-4 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Sauté Garlic and Chili

    In the same skillet, add minced garlic and sliced chili pepper. Cook for 1-2 minutes until fragrant.

    Combine with Basil

    Remove the skillet from heat and add fresh basil, tossing to combine. Serve the shrimp topped with the garlic, chili, and basil mixture.
