Method
Preparation
- 1
Clean the Mussels
Rinse the fresh mussels under cold water. Scrub the shells with a brush to remove any dirt. Remove the beards (the fibrous strands) by pulling them towards the hinge of the shell.
- 2
Prepare the Sauce
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned.
Cooking
- 3
Add Wine and Tomatoes
Pour in the red wine and let it simmer for about 3 minutes, allowing the alcohol to cook off. Then, add the crushed tomatoes and stir well.
- 4
Cook the Mussels
Add the cleaned mussels to the skillet, cover it, and let them cook for about 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.
- 5
Finish the Dish
Stir in the chopped basil and season the dish with salt and black pepper to taste. Serve immediately with crusty bread.
