Pasta Preparation

    Cook the Linguine

    In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Vegetable Sauté

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent.

    Add Mushrooms and Garlic

    Add the sliced portobello mushrooms and minced garlic to the skillet. Cook for an additional 5 minutes until the mushrooms are tender.

    Incorporate Sun-Dried Tomatoes and Spinach

    Stir in the chopped sun-dried tomatoes and fresh spinach. Cook until the spinach wilts, about 2-3 minutes.

Sauce Preparation

    Add White Wine

    Pour the white wine into the skillet, scraping the bottom to release any browned bits. Allow it to simmer for about 3-5 minutes until slightly reduced.

    Season the Sauce

    Season with salt and black pepper. Stir to combine and let the sauce cook for an additional 2 minutes.

Combine and Serve

    Combine Pasta and Sauce

    Add the cooked linguine to the skillet, tossing gently to coat the pasta in the sauce and vegetables.

    Plate the linguine, and top with grated Parmesan cheese. Serve warm and enjoy!
