Method

Prepare the Clams

    Clean the Clams

    Rinse the fresh clams under cold water to remove any sand or grit. Soak them in salted water for about 20 minutes to help them expel any remaining sand.

Cook the Linguine

    Boil the Linguine

    In a large pot of boiling salted water, add the linguine pasta. Cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Prepare the Scampi Sauce

    Sauté Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Clams and Wine

    Add the cleaned clams to the skillet and pour in the white wine. Stir to combine and cover the skillet. Cook for about 5-7 minutes, or until the clams have opened.

    Finish the Sauce

    Once the clams have opened, remove the lid and add the butter, red pepper flakes, salt, and black pepper. Stir until the butter has melted and the sauce is well combined. Add the fresh parsley just before serving.

Combine and Serve

    Mix with Linguine

    Add the cooked linguine to the skillet with the clam sauce. Toss gently to combine, ensuring the pasta is well coated with the sauce.

    Serve

    Plate the clams and linguine. If desired, ladle tomato sauce on top. Garnish with additional parsley and serve immediately.
