Fish and Marinade

Sauce

Method

Preparation of Fish

  1. 1

    Marinate the Fish

In a bowl, combine olive oil, minced garlic, salt, and black pepper. Add the fish fillets and coat them well with the mixture. Let marinate for 15 minutes.

Making the Sauce

  1. 2

    Cook Ham and Bacon

In a large skillet over medium heat, add diced cured ham and bacon. Cook until they are crispy, about 5-7 minutes. Remove excess fat if necessary.

  2. 3

    Prepare the Tomato Sauce

Add canned crushed tomatoes to the skillet with ham and bacon. Stir in red chili flakes, dried oregano, and sugar. Simmer for 10-15 minutes, stirring occasionally. Adjust seasoning to taste.

  3. 4

    Finish the Sauce

Once the sauce has thickened, stir in fresh basil. Keep warm while cooking the fish.

Cooking the Fish

  1. 5

    Pan Fry the Fish

In another skillet, heat a little olive oil over medium-high heat. Add the marinated fish fillets and cook for 3-4 minutes on each side, or until golden brown and cooked through.

Serving

  1. 6

    Plate the Dish

Place the cooked fish on plates and generously spoon the spicy tomato sauce over the top. Serve immediately with crusty bread or pasta if desired.
