Preparation of Fish

Prepare the Fish
Rinse the fresh fish fillets under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Dredge in Flour
Spread the all-purpose flour on a plate. Dredge each seasoned fish fillet in the flour, making sure to coat both sides. Shake off any excess flour.
Cooking the Fish

Pan-Fry the Fish
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the coated fish fillets to the skillet. Cook for about 4-5 minutes on each side, or until the fish is golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.

Add Wine
Pour in the dry white wine and increase the heat to high. Bring the mixture to a boil, scraping the bottom of the skillet to release any browned bits. Let it simmer for about 2-3 minutes to reduce slightly.

Finish with Butter and Herbs
Reduce the heat to low and add the unsalted butter, stirring until melted and well combined. Stir in the chopped parsley and lemon juice, mixing everything together until the sauce is smooth.
Serving

Plate the Dish
Return the cooked fish fillets to the skillet, spooning the sauce over them to coat. Allow the fish to warm up for about 1 minute in the sauce before serving.

Serve the Fish Alla Scampi hot, garnished with additional parsley if desired, alongside crusty bread or over a bed of pasta.
