Preparation

    Prepare the Fish

    Pat the fish fillets dry with paper towels and season both sides with salt and black pepper. Set aside.

    Cook the Bacon

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced bacon and cook until crispy, about 4-5 minutes. Remove the bacon and set aside, leaving the grease in the skillet.

    Sauté the Onion and Garlic

    In the same skillet with the bacon grease, add the diced onion and sauté for about 3 minutes until it becomes translucent. Add the minced garlic and cook for an additional 1 minute, being careful not to burn the garlic.

Cooking

    Cook the Fish

    Add the remaining 2 tablespoons of olive oil to the skillet. When hot, add the fish fillets and cook for about 3-4 minutes per side or until golden brown and cooked through. Remove the fish from the skillet and keep warm.

    Make the Sauce

    To the skillet, add the white wine and scrape the bottom of the pan to deglaze, picking up all the flavorful bits. Let it simmer for 2-3 minutes until slightly reduced. Stir in the fresh diced tomatoes and cooked bacon, and let simmer for another 3-4 minutes.

    Finish with Basil

    Stir in the chopped fresh basil into the sauce just before serving. Adjust seasoning with salt and pepper to taste.

Serving

    Plate the Dish

    On a serving plate, place the fish fillets and spoon the tomato-bacon sauce over the top. Garnish with additional fresh basil if desired.
