Prepare the Fish
Pat the fish fillets dry with paper towels and season both sides with salt and black pepper. Set aside.

Cook the Bacon
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced bacon and cook until crispy, about 4-5 minutes. Remove the bacon and set aside, leaving the grease in the skillet.

Make the Sauce
To the skillet, add the white wine and scrape the bottom of the pan to deglaze, picking up all the flavorful bits. Let it simmer for 2-3 minutes until slightly reduced. Stir in the fresh diced tomatoes and cooked bacon, and let simmer for another 3-4 minutes.

Finish with Basil
Stir in the chopped fresh basil into the sauce just before serving. Adjust seasoning with salt and pepper to taste.

Plate the Dish
On a serving plate, place the fish fillets and spoon the tomato-bacon sauce over the top. Garnish with additional fresh basil if desired.
