Preparation of Fish

    Prepare the Fish

    Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper.

    Dredge in Flour

    Place the all-purpose flour in a shallow dish. Dredge each fish fillet in the flour, ensuring it is fully coated, and shake off any excess flour.

Cooking the Fish

    Heat the Olive Oil

    In a large skillet, heat the olive oil over medium-high heat until shimmering.

    Cook the Fish

    Add the dredged fish fillets to the skillet in a single layer. Cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove the fish from the skillet and set aside on a plate.

Making the Sauce

    Sauté the Garlic

    In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds, or until fragrant, being careful not to burn it.

    Add the capers and white wine to the skillet, scraping up any brown bits from the bottom of the pan. Bring to a simmer and let it cook for about 2-3 minutes until slightly reduced.

    Stir in the lemon juice and unsalted butter, whisking until the butter melts and the sauce is emulsified. Season with additional salt and pepper to taste.

Final Assembly

    Return the cooked fish to the skillet, spooning the sauce over the top. Let it cook for an additional minute to heat through.
