Rinse the fish fillets under cold water and pat them dry with paper towels. Season both sides of the fillets with salt and black pepper.

Place the all-purpose flour in a shallow dish. Dredge each fish fillet in the flour, ensuring it is fully coated, and shake off any excess flour.
Cooking the Fish

Heat the Olive Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Add Capers and Wine
Add the capers and white wine to the skillet, scraping up any brown bits from the bottom of the pan. Bring to a simmer and let it cook for about 2-3 minutes until slightly reduced.

Stir in the lemon juice and unsalted butter, whisking until the butter melts and the sauce is emulsified. Season with additional salt and pepper to taste.

Return the cooked fish to the skillet, spooning the sauce over the top. Let it cook for an additional minute to heat through.
