Chicken Preparation

Prepare Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Dredge each chicken breast in flour, dip in beaten eggs, and then coat with bread crumbs.

Fry Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook until golden brown on both sides, about 5-7 minutes per side. Transfer to a baking dish.
Eggplant Preparation

Prepare Eggplant
Slice the eggplant into 1/2 inch thick rounds and sprinkle with salt. Let it sit for 30 minutes to draw out moisture. Rinse and pat dry.

Mushroom Marsala Sauce

Add Marsala Wine
Pour in the Marsala wine and let it simmer for 2-3 minutes. Stir in the butter until melted and then add chopped parsley.
Assembly

Assemble the Dish
Pour the mushroom Marsala sauce over the layered chicken and eggplant in the baking dish. Top with shredded mozzarella cheese.

Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly. Serve hot.
