Chicken Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the boneless chicken breasts with salt and black pepper on both sides.
- 2
Bread the Chicken
Set up a breading station: Place flour in a shallow dish, beat the eggs in another, and combine breadcrumbs and Parmesan cheese in a third dish. Dredge each chicken breast in flour, dip in the beaten eggs, and then coat with the breadcrumb mixture.
- 3
Fry the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel to drain excess oil.
Assembling and Baking
- 4
Assemble the Dish
In a baking dish, spread a layer of tomato sauce on the bottom. Place the fried chicken breasts on top of the sauce. Spoon additional tomato sauce over each chicken breast.
- 5
Add Cheese
Sprinkle the mozzarella cheese generously over the chicken and sauce, ensuring it covers the chicken evenly.
- 6
Bake
Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
- 7
Garnish and Serve
Remove from the oven, garnish with fresh basil, and let it cool for a few minutes before serving.
