    Prepare the Ingredients

    Begin by gathering all the ingredients. Slice the mushrooms, chop the bell peppers into strips, and mince the garlic.

    Sear the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Season the boneless chicken thighs with salt and black pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the sliced mushrooms and bell peppers. Sauté for another 5-6 minutes until the vegetables are tender.

    Add Wine and Sauce

    Pour in the red wine and scrape up any brown bits from the bottom of the skillet. Allow the wine to simmer for about 3 minutes. Then, add the tomato sauce and sliced black olives. Stir to combine.

    Return the seared chicken thighs to the skillet, spooning the sauce and vegetables over the top. Cover the skillet and reduce the heat to low. Let it simmer for about 20-25 minutes until the chicken is cooked through and tender.
