    Prepare the Filling

    In a bowl, combine the ricotta cheese, grated Parmesan cheese, egg, salt, black pepper, and chopped parsley. Mix until smooth and well combined.

    Make the Dough

    On a clean surface, create a mound with the flour and make a well in the center. Add the eggs and salt into the well. Gradually mix the flour into the eggs using a fork or your fingers until a dough forms. Knead the dough for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Cook the Meat Sauce

    In a large skillet, heat the olive oil over medium heat. Add chopped onion and minced garlic, sautéing until the onion is translucent. Add the ground beef, cooking until browned. Drain excess fat. Stir in the crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Simmer for 20-25 minutes, stirring occasionally.

Assemble the Ravioli

    Fill and Shape the Ravioli

    Roll out the rested dough into thin sheets. Cut into squares or circles. Place a teaspoon of the ricotta filling in the center of half the squares/circles. Moisten the edges with water, then cover with the remaining squares/circles. Press down to seal and ensure there are no air pockets.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.

Serving

    Serve the Dish

    Plate the cooked ravioli and top with the meat sauce. Optionally, sprinkle with more Parmesan cheese and fresh parsley before serving.
