Cooking the Pasta

Boil Water
Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil.

Cook the Pasta
Add your choice of pasta (linguine, vegetable, potato, or angel hair) to the boiling water. Cook according to the package instructions until al dente, usually around 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta water. Drain the pasta and set aside.
Making the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the diced pancetta or bacon. Cook until crispy and golden, about 5-7 minutes. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

Prepare the Egg Mixture
In a mixing bowl, whisk together the egg yolks, grated Parmesan cheese, and freshly ground black pepper. Set aside.

Add Egg Mixture
Quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is achieved.
Serving the Dish

Serve the Carbonara pasta immediately, garnished with chopped fresh parsley and additional Parmesan cheese as desired.
