Calamari Preparation
White Wine Butter Sauce
Method
Calamari Preparation
- 1
Prepare the Calamari
Rinse the calamari steaks under cold water and pat them dry with paper towels.
- 2
Season and Flour
In a shallow dish, mix together the all-purpose flour, salt, and black pepper. Dredge each calamari steak in the flour mixture, ensuring they are fully coated.
- 3
Pan Fry the Calamari
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the floured calamari steaks and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
White Wine Butter Sauce
- 4
Sauté the Garlic
In the same skillet, reduce the heat to medium and add the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- 5
Add the Wine
Pour in the dry white wine and bring it to a simmer. Let it reduce for about 3-4 minutes.
- 6
Finish the Sauce
Stir in the lemon juice and chopped parsley. Season with salt and pepper to taste. Cook for an additional 1-2 minutes until the sauce is slightly thickened.
