Calamari Preparation

Prepare the Calamari
Rinse the calamari steaks under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Breading the Calamari
Set up a breading station: in one bowl, place the all-purpose flour; in a second bowl, beat the eggs; and in a third bowl, place the breadcrumbs. Dip each calamari steak first in flour, then in the beaten eggs, and finally coat with breadcrumbs. Make sure each piece is evenly coated.

Pan Fry the Calamari
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded calamari steaks in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.

Prepare the Garlic and Tomato Sauce
In the same skillet, reduce the heat to low and add the minced garlic cloves. Sauté for about 1-2 minutes until fragrant. Pour in the canned tomato sauce and stir to combine. Allow it to simmer for 5 minutes.

Combine and Melt the Cheese
Place the fried calamari steaks in the skillet with the tomato sauce. Sprinkle the mozzarella cheese evenly over the calamari. Cover the skillet with a lid and let it cook for an additional 3-4 minutes until the cheese has melted.

Garnish and Serve
Remove from heat, garnish with fresh basil leaves, and serve immediately while hot.
