1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the radiatore pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. Sauté the Mushrooms
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and cook for 5-7 minutes until they are browned and tender.
3. Add Spinach
Add the fresh spinach to the skillet and cook for an additional 2-3 minutes until wilted. Season with salt and black pepper.
4. Combine Pasta and Sauce
Add the cooked radiatore pasta to the skillet with the mushroom and spinach mixture. Pour in a little reserved pasta water to create a sauce, tossing everything together until well combined.
5. Finish and Serve
Remove from heat and stir in the grated Parmesan cheese. Adjust seasoning if necessary. Serve immediately, garnished with extra Parmesan if desired.
