Method

Cooking Pasta

  1. 1

    Boil the Pasta

In a large pot, bring water to a boil. Add a pinch of salt and add the pasta. Cook according to package instructions until al dente, usually around 8-10 minutes.

  2. 2

    Drain the Pasta

Once the pasta is cooked, drain it in a colander and set aside, reserving about 1 cup of pasta water.

Cooking Vegetables

  1. 3

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add zucchini, bell pepper, carrot, and broccoli. Cook for about 5-7 minutes until vegetables are tender but still crisp.

  2. 4

    Add Cherry Tomatoes

Add the cherry tomatoes to the skillet and cook for an additional 2-3 minutes until they start to soften.

Combining Ingredients

  1. 5

    Combine Pasta and Vegetables

Add the cooked pasta to the skillet with the vegetables. Toss well to combine, adding reserved pasta water a little at a time to achieve desired consistency.

  2. 6

    Season the Dish

Season with salt and black pepper to taste. Stir in grated Parmesan cheese and chopped basil, mixing thoroughly.

  3. 7

    Serve

Remove from heat and serve immediately, garnished with additional basil and Parmesan cheese if desired.
