Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Mix Dry Ingredients
In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the Calamari
Dip each calamari ring first into the egg mixture, allowing any excess to drip off, then coat it in the flour mixture. Ensure each piece is evenly coated.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce Preparation

Sauté Garlic
In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes and Seasonings
Add the canned crushed tomatoes, dried oregano, red pepper flakes, and salt. Stir well to combine.

Simmer the Sauce
Lower the heat and let the sauce simmer for 15-20 minutes, stirring occasionally, until thickened.

Finish with Basil
Stir in the fresh basil leaves just before serving.
