Method
Cake
Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.
Incorporate Boiling Water
Carefully stir in the boiling water until the batter is well combined. Note that the batter will be thin.
Bake the Cake
Pour the batter evenly into the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
Cool the Cake
Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, remove from the pans and transfer to wire racks to cool completely.
Ganache Topping
Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Do not let it boil.
Combine with Chocolate
Remove the saucepan from the heat and pour the hot cream over the chocolate chips in a heatproof bowl. Let it sit for 5 minutes to melt the chocolate.
Stir to Combine
After 5 minutes, whisk the mixture until smooth and glossy.
Top the Cake
Once the cake layers have cooled completely, pour the ganache over the top of one layer, spreading it gently. Place the second layer on top and pour the remaining ganache over the cake, allowing it to drip down the sides.
Serve
Let the ganache set for about 30 minutes before slicing the cake. Serve and enjoy!
