Preparation of the Crème Brulée

Preheat your oven to 325°F (160°C).

Melt the White Chocolate
In a small saucepan, combine the heavy cream, whole milk, and white chocolate chips. Heat over medium heat, stirring until the chocolate is completely melted and the mixture is smooth. Remove from heat and let it cool slightly.

In a separate bowl, whisk together the egg yolks and granulated sugar until thick and pale.

Slowly pour the warm cream mixture into the egg yolk mixture, whisking continuously to prevent the eggs from scrambling. Stir in the vanilla extract.

Strain the mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.

Bake in Water Bath
Boil water and carefully pour it into the baking dish around the ramekins until it reaches halfway up the sides. Bake in the preheated oven for 30-35 minutes, or until the edges are set but the centers still jiggle slightly.
