Method

Preparation of the Filet

  1. 1

    Prepare the Filet

Remove the Wagyu beef filets from the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This helps the meat cook evenly.

  2. 2

    Season the Filet

Rub each filet with olive oil and season generously with sea salt and freshly ground black pepper on both sides.

Cooking the Filet

  1. 3

    Preheat the Pan

Heat a cast-iron skillet or heavy frying pan over medium-high heat until it is hot.

  2. 4

    Sear the Filet

Place the seasoned filets in the hot skillet. Sear for about 3-4 minutes without moving them, until a nice crust forms.

  3. 5

    Flip and Cook

Flip the filets using tongs and cook for another 3-4 minutes for medium-rare doneness. Adjust the time if you prefer your steak more or less cooked.

  4. 6

    Add Butter and Herbs

In the last minute of cooking, add butter and fresh rosemary sprigs to the skillet. Spoon the melted butter over the filets as they finish cooking for added flavor.

Resting and Serving

  1. 7

    Rest the Filets

Remove the filets from the skillet and let them rest on a cutting board for about 5-10 minutes. This allows the juices to redistribute throughout the meat.

  2. 8

    Serve

Slice the filets and serve immediately, garnished with a sprig of rosemary if desired.
