Preparation

  1. 1

    Prepping the Steak

Remove the Wagyu Tomahawk steak from the refrigerator and let it come to room temperature, about 1 hour before cooking. This allows for even cooking.

  2. 2

    Dry the Steak

Pat the steak dry with paper towels to remove excess moisture. This will help achieve a nice sear.

  3. 3

    Make the Seasoning

In a small bowl, mix together kosher salt, freshly ground black pepper, garlic powder, and smoked paprika. This will be your seasoning mix.

Cooking

  1. 4

    Preheat Cooking Surface

Preheat your grill or cast-iron skillet over high heat. If using a grill, make sure it's well-oiled to prevent sticking.

  2. 5

    Season the Steak

Rub the steak with olive oil on both sides. Then generously season the steak with the seasoning mix, pressing it into the meat.

  3. 6

    Sear the Steak

Place the steak on the hot grill or skillet. Sear for about 4-5 minutes on one side until a crust forms. Do not move the steak during this time.

  4. 7

    Cook the Other Side

Flip the steak and cook for another 4-5 minutes for medium-rare, or longer depending on your desired doneness. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

  5. 8

    Add Butter and Rosemary

If desired, add butter and fresh rosemary to the skillet or grill during the last minute of cooking, basting the steak with the melted butter for added flavor.

  6. 9

    Rest the Steak

Once done, remove the steak from the heat and let it rest for at least 10 minutes before slicing. This allows juices to redistribute.

Serving

  1. 10

    Slice and Serve

Slice the steak against the grain into thick slices. Serve on a platter, optionally garnished with additional fresh rosemary.
