Preparing the Salmon

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

    Heat the Oil

    In a large skillet, heat olive oil over medium-high heat.

    Cook the Salmon

    Add the salmon fillets to the skillet, skin side down. Cook for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes or until the salmon is cooked through.

Making the Mango Ginger Habanero Glaze

    Combine Ingredients

    In a small saucepan, combine the diced mango, grated ginger, chopped habanero, honey, soy sauce, and lime juice.

    Cook the Glaze

    Heat the mixture over medium heat, stirring occasionally, until it comes to a simmer. Allow it to cook for about 5-7 minutes, or until the mango is soft and the glaze has thickened slightly.

    Blend the Glaze

    Remove from heat and use an immersion blender (or transfer to a regular blender) to puree the glaze until smooth. Set aside.

Plating the Dish

    Plate the Salmon

    Place the cooked salmon fillets on a serving plate.

    Drizzle the mango ginger habanero glaze generously over the salmon.

    Garnish with Mandarins

    Top with mandarin segments and sprinkle fresh cilantro over the dish before serving.
