For the Sesame Crusted Salmon

Prepare the Salmon
Preheat your oven to 400°F (200°C).

Season the Salmon
Season the salmon fillets with salt and black pepper on both sides.

Coat with Sesame Seeds
Press each salmon fillet into the sesame seeds, coating both sides evenly.

Cook the Salmon
In a large oven-safe skillet, heat the olive oil over medium heat. Once hot, add the salmon fillets, cooking for about 3-4 minutes on each side until golden brown. Transfer the skillet to the oven and bake for an additional 8-10 minutes, or until the salmon is cooked through.
For the Beet and Cucumber Salad

Prepare the Salad
In a mixing bowl, combine the roasted and sliced beets, thinly sliced cucumber, and chopped parsley. Toss gently to combine.
For the Sesame Ginger Vinaigrette

Mix the Vinaigrette
In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, grated ginger, and honey until well combined.
To Serve

Plate the Dish
On a serving plate, place a portion of the beet and cucumber salad. Top with a sesame-crusted salmon fillet and drizzle with sesame ginger vinaigrette.
