    Wash the Spinach

    Thoroughly rinse the fresh leaf spinach under cold running water to remove any dirt or sand. Drain well and set aside.

    Prepare the Aromatics

    Peel and finely chop the garlic cloves. Peel the shallot and slice it thinly.

    Heat the Oil and Butter

    In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of unsalted butter over medium heat until the butter is melted and begins to foam.

    Sauté the Aromatics

    Add the chopped garlic and sliced shallots to the skillet. Sauté for about 2 minutes, stirring frequently until they are fragrant and the shallots are translucent.

    Add the Spinach

    Gradually add the washed leaf spinach to the skillet. It may seem like a lot, but it will wilt down significantly. Toss the spinach with the garlic and shallots.

    Season and Cook

    Sprinkle salt, black pepper, and red pepper flakes over the spinach. Continue to sauté for 3-5 minutes, or until the spinach is wilted and tender.

    Serve

    Once cooked, remove from heat and serve immediately as a side dish or on top of your favorite grain or protein.
